Classic Sauerkraut Bigos
Hearty, simple, and budget-friendly — a lunch or dinner for the whole family! Classic sauerkraut bigos is braised with pork, which you can swap out for sausage, any ground meat, or hot dogs if you like. The cabbage turns out fragrant and tangy — incredibly tasty!

How do you make classic sauerkraut bigos? Gather the ingredients and spices for a delicious bigos. You can swap the ribs for smoked or cooked sausage, ground meat, or pork. Wash the ribs and dry them well so they brown nicely, then cut them into individual pieces. Use true fermented sauerkraut, not the vinegar-pickled kind.

Pour four tablespoons of vegetable oil into a skillet and heat it on the stove.

Add the cut-up ribs to the skillet.

Peel the onion and cut it into medium cubes.

Fry the meat in the skillet over high heat until golden on both sides.

Add the chopped onion to the skillet with the meat.

Stir the meat and onion together well and keep frying.

Rinse one kilogram (about 2 lb) of sauerkraut with water to cut its acidity, then put it in a colander to drain off the excess liquid.

Add the cabbage to the skillet with the fried meat and onion.

Mix all the ingredients in the skillet together well.

Cover the skillet and continue braising the meat and cabbage for about ten minutes.

After that time, stir the contents of the skillet well again.

Turn the heat low, cover the skillet, and keep braising the cabbage and meat for 30 minutes.

After thirty minutes, add the tomato paste to the skillet.

Add dried parsley and dill, or any other herbs you like.

Add a blend of black and red pepper and ground coriander, or any other spices to taste.

Add salt to taste.

And the peeled garlic cloves, put through a press.

Mix all the ingredients in the skillet together well.

Cover the skillet again and keep braising the cabbage for about seven more minutes, until the bigos is fully done.

Spoon the finished sauerkraut bigos with pork ribs onto serving plates and bring it to the table.
