Pork in Curry Sauce

  • Cut the pork against the grain into slices about ½ inch (1 cm) thick. Season each piece with salt and pepper. Finely chop the cilantro. Heat the olive oil in a deep skillet or saucepan. Add the ginger and curry to the hot oil. Fry briefly over high heat, stirring constantly, then turn the heat down to low. Pour in the water and ¾ of the coconut milk and bring the sauce to a boil. Add half the cilantro and all the pork to the boiling sauce. Bring it back to a boil, cover, and simmer for 50 minutes over medium heat. Then lower the heat and cook the meat uncovered until the excess liquid cooks off. Stir in the remaining coconut milk and cilantro, plus more salt if needed. Stir and bring to a boil. Serve the pork in curry sauce with your favorite side. Enjoy!
