Turkey and Potato Roast

A wonderful, hearty roast of turkey and potatoes. Turkey is a healthy choice — it's always easy to cook, and its flavor holds its own against other meats. This turkey-and-potato roast is a can't-miss weeknight dinner for the whole family: everyone leaves the table full and happy. The recipe is very simple, so even a beginner cook can pull it off.

  • How do you make a turkey and potato roast? Rinse the turkey thigh and cut the meat into pieces — as big or small as your family likes. Set a nonstick pot over the heat and brown the meat until golden. Peel and chop the onion. Once the meat is browned, add the onion and fry for a couple of minutes. Peel and cut the carrot (or grate it), add it to the meat and onion, and fry for about 5 minutes. When everything is browned, pour in enough water to cover the meat by about an inch. Add salt and pepper. Simmer the meat for about 40 minutes. Peel the potatoes and cut them into large chunks. Once the meat has simmered, add the potatoes and top up with water if needed — enough to just cover them. Add more salt if necessary. Cook the roast until the potatoes are done. Serve hot, sprinkled with chopped fresh herbs.
  • A quick note on oils: every oil is only good up to a certain temperature — its smoke point, above which it starts to burn and form harmful compounds. It's worth knowing your oil's smoke point and choosing the right one for frying.
  • One more thing: the wrong pan can ruin even the best recipe, so pick a pan suited to what you're cooking.
