Chicken Roll in a Ham Maker

Cooking method

    A ham maker is a press mold made up of a few parts: a cylinder with holes; two removable end caps, between which the meat mixture goes; springs that create the pressure — the "press" itself. You'll also need a baking bag.

    Set one of the end caps at the bottom of the cylinder and carefully line it with the baking bag.

    Remove the skin and bones from the chicken, then rinse and pat it dry.

    Cut the meat into small pieces and put it in a blender. There are lots of ways to do the filling: a mix of chunks and ground meat, whole pieces, or you can add mushrooms, olives, carrots, prunes with nuts, and so on.

    Cover the top with the second end cap and attach the springs, being careful not to tear the bag at the bottom.

    Put a protective mat on the bottom of the slow cooker so you don't scratch it. Set the ham maker inside and pour in cold water. You can cook a ham maker in the oven, in a slow cooker, or on the stovetop — I'm going with the slow cooker.

    Set the "Stew" mode for 50–60 minutes.

    After an hour, carefully lift it out of the hot water and set it aside to cool. Once the cylinder has cooled, refrigerate it for several hours to set — I leave it overnight.

    Slide the wrapped meat out of the cylinder.

    Peel away the bag to reveal a fragrant chicken roll wrapped in a layer of delicious jelly.
