Squash stew does not contain anything fried and spicy (pepper can not be added), on the contrary, it consists of healthy vegetables. This dish is a wonderful light dinner.
Zucchini for stew should be "young", with a soft peel. Wash it and cut it in half, clean the seeds, chop into cubes with a side of 1 cm. Remove the core and seeds from the sweet red pepper. Cut the pulp into pieces of the same size as the zucchini. Onions and ripe tomatoes must be processed. Remove the onion from the husk, finely chop it and the tomatoes.
Prepare the dishes for stewing. Pour vegetable oil into it, add all the prepared vegetables and salt the stew to taste. Sprinkle with fragrant ground pepper, bring the dish to a boil and simmer everything for 40 minutes.
Sprinkle the finished stew with parsley.
When cooking stew, it should be borne in mind that the larger the vegetables are cut, the less they boil.
