Greek-Style Bean Salad for Winter

    1. Soak the beans overnight, then boil them until half done. 2. Peel the tomatoes by blanching them in boiling water. 3. Peel the carrots, peppers, garlic, and onion. 4. Cut all the vegetables into small cubes. 5. Put the chopped tomatoes in a Dutch oven, add the beans, stir, set over the heat, and simmer for 30 minutes. 6. Pour the oil into a large pot and add the salt, sugar, onion, bell pepper, and carrots; stir and cover. Simmer until tender, stirring occasionally, keeping it covered and watching that it doesn't scorch. 7. Once those vegetables are tender, add the beans and tomatoes. Stir and add the vinegar essence. Stir and taste, adjusting the seasoning if needed. 8. Add the garlic and chili pepper. Simmer for 10 minutes. 9. Ladle into sterilized jars, seal, turn upside down, wrap up, and let cool completely. Enjoy!
