Canned Mackerel and Tomato Salad for Winter

Fish put up for winter with vegetables — a winning recipe! Great with potatoes, and a lifesaver for a busy student. Can up mackerel with vegetables and you won't need store-bought canned fish at all. Really tasty!

    1. Gut and clean the mackerel, remove the fins and tail, and cut it into manageable pieces. Boil the fish in salted water. Then, if you like, flake the cooked fish and remove the bones. 2. Run the tomatoes through a meat grinder or purée them in a blender. Wash, peel, and cut the remaining vegetables however you like. 3. Put all the vegetables in a pot, bring to a boil, and simmer for 30 minutes. Then add the fish and spices and simmer for another 30 minutes. Taste and adjust the seasoning. 4. Ladle the finished salad into sterilized jars, seal with sterilized lids, turn them upside down, wrap them up, and let cool. Store in a dark, cool place. Enjoy!
