Sauceless Pasta Nests with Rabbit and Parmesan

A hearty, tasty dish for the whole family — and easy to make! These sauceless pasta nests with rabbit and Parmesan can be cooked with either water or meat broth; broth is the usual choice if the meat isn't very fatty. The ground meat gets only onion, garlic, and spices — no egg needed. You'll want a deep skillet or a sauté pan with a lid. At the end, sprinkle the golden nests of pasta and meat with grated cheese or herbs. Serve with a vegetable salad and a spicy sauce or gravy.

    1. Get all the ingredients ready. Grind meat of your choice, or thaw it ahead of time — I used ground rabbit fillet. You'll need nest-shaped pasta. Peel the onion and garlic and rinse them.

    1. Put all the ground meat in a deep bowl. Add black pepper and salt and mix. You can also add poultry seasoning or ground coriander.

    1. Grate the onion on a coarse grater. Press the garlic through a garlic press. Add both to the meat and mix until smooth. If you're grinding the meat fresh, you can run the onion and garlic through the grinder too.

    1. Place as many pasta nests as you need in a deep skillet. Keep in mind that the nests will expand as they cook.

    1. Shape the meat into small patties and set one in each pasta nest. The patties come together nicely if you form them with wet hands.

    1. Pour warm water into the skillet so it covers the nests about two-thirds of the way up. If you like, salt the liquid and add spices or a bay leaf. Cover the skillet with a lid.

    1. Bring to a boil, then lower the heat and cook the nests with the meat for about 25 minutes. Grate the hard cheese on a fine grater. Turn off the heat, sprinkle the pasta nests with the cheese, and cover. You can serve it in 5 minutes. Wonderfully fragrant, tasty pasta with a meat patty. Enjoy!
