Cabbage and Potato Solyanka with Pork

  • Cut the pork into small pieces and fry them in hot vegetable oil for 15 minutes. Then add the grated carrot and finely chopped onion and cook for about 10 minutes more. Stir in the tomato paste and mix well. Transfer everything to a large saucepan or Dutch oven. Add the peeled, diced potatoes and the cabbage. Stir, then pour in enough water to come about halfway up the contents, and season with your spices and bay leaves. Bring to a boil, lower the heat to medium, and simmer for about 25 minutes. Serve with fresh herbs and, if you like, a dollop of mayonnaise or sour cream. Enjoy!
