Chicken Plov with Carrots (Dutch Oven)

- Let's make a delicious plov in a Dutch oven — today we're doing it with chicken. Start with the meat: rinse the chicken and cut it into fairly large pieces. Next, peel the carrots, onion, and garlic. Cut the carrots and garlic into thick matchsticks and finely chop the onion.
- Rinse the rice thoroughly, until the water runs clear. Heat the Dutch oven with the vegetable oil, add the onion, and fry for a few minutes. Add the chopped chicken and fry for about five minutes, stirring as you go.
- Now add the carrots and garlic and fry a few minutes more. Sprinkle in salt, ground pepper, and spices, and add the whole peppercorns and bay leaf. Pour in hot (boiled) water and simmer for a few minutes.
- Spread the rice over the top, adding more water if needed (the water should sit a couple of centimeters above the rice). Add more salt if needed too.
- Bring everything to a boil, lower the heat, cover, and cook the plov for about half an hour. All done! Enjoy!
