Cabbage Rolls from Frozen Cabbage

A family favorite! Make a batch and watch everyone dig in. Yes, you can make cabbage rolls even from frozen cabbage! Many cooks blanch the leaves before freezing a head of green cabbage for the winter, and that's exactly the kind used here. If your cabbage went into the freezer raw, just blanch the leaves before you start rolling.

    1. Dip the cabbage leaves into boiling water for a couple of minutes to thaw them, then gently lift them out into a deep bowl. 2. Boil the rice until it's about halfway cooked. Peel the garlic and run it through a press. Put the ground meat in a bowl, add the rice and garlic, season with salt and pepper, and mix thoroughly. 3. Peel the carrots and onion; grate the carrots on the medium holes of a box grater and finely chop the onion. 4. With damp hands, shape a portion of the meat into a patty and wrap it snugly in a cabbage leaf. Layer the rolls in a heavy-bottomed pot, scattering onion and carrot over each layer and tucking in the bay leaves. 5. Add enough water so the rolls are not quite covered, season with salt and pepper, and simmer over low heat for 40 minutes. 6. Stir the sour cream and tomato paste together in a bowl, pour the sauce over the cabbage rolls, and simmer another 10–15 minutes. Serve sprinkled with chopped herbs and, if you like, an extra spoonful of sour cream. Enjoy!
