Slow-Cooker Pork with Prunes

  • Start by soaking the mushrooms and the prunes in separate bowls of clean, warm water. Let them sit for 20–30 minutes.
  • Meanwhile, prep the rest. Rinse the pork, pat it dry, and cut it into large chunks. Peel the potatoes, carrot, and onion, and cut the vegetables into large, evenly sized cubes.
  • Heat the butter in the slow cooker on the "Sauté" setting, add the pork, and brown it for 8–10 minutes, stirring now and then. Transfer the pork to a plate and add the vegetables to the pot. Sauté them on the same setting for 8–10 minutes, stirring.
  • Return the pork to the sautéed vegetables and add the drained prunes and mushrooms. Stir the tomato paste into the water and pour it in over everything, then season with salt. Switch to the "Stew" setting and cook everything together for half an hour.
