Skillet Chicken in a Kefir Marinade

Even a first-time cook can pull this one off. My wonderful mother-in-law is the one who introduced me to a kefir marinade for chicken. Whenever we head out to the country for a barbecue, my husband and I bring marinated pork, and she brings chicken soaked in kefir. No matter which recipe we grill by, her chicken always comes out the tastiest and juiciest. I took her marinade to heart and now use it often for chicken and turkey — it's especially good with chicken baked in the oven in individual pots. Here, though, I'm sharing my quick version braised right in the skillet.

Cooking method

    Finely chop the dill.

    Slice the garlic thin.

    Rinse the chicken breast, pat it dry, and cut it into medium pieces.

    Stir together the kefir, dill, ground black pepper, and salt.

    Add the chicken to the marinade.

    Add the garlic slices. Cover the bowl with plastic wrap and let it marinate for 30 minutes.

    Lay the chicken pieces in a preheated skillet along with a little of the marinade.

    Braise over low heat for about 25 minutes, turning now and then, until cooked through. As the liquid cooks off, pour in a little more of the kefir marinade.
