Layered Lazy Cabbage Rolls in the Slow Cooker

A veggie-and-meat dish for the whole family — it doesn't get tastier than this! Love cabbage rolls but never have time to make them? Reaching for the frozen ready-made kind? Skip those and make this beloved dish at home from good ingredients, using my lazy cabbage roll recipe and your slow cooker.

  • Get your ingredients ready:
    • rinse the rice, put it in the slow cooker, add a little cold water (150 ml is plenty), select the "Rice" (or "Porridge") setting, and set the time to 20 minutes. Let the cooked rice cool;
    • shred the green cabbage into thin ribbons, sprinkle with salt, and scrunch it with your hands, then mix it with the sauerkraut;
    • rinse the dill and chop it finely;
    • peel, rinse, and coarsely grate the carrots;
    • peel the onion and cut it into small cubes;
    • sauté the onion in vegetable oil for 2 minutes, then add the carrots and dill, pour in a little water (50 ml), and simmer over low heat for 5 minutes;
    • put the ground meat in a bowl, add the cooked rice, season with salt and dried seasonings to taste, and mix;
    • put the tomato sauce in a bowl, add the sour cream and 300 ml of hot boiled water, and stir (adjust with salt and sugar if needed).
  • Once everything's ready, assemble the dish:
    • grease the bottom of the slow-cooker pot with oil;
    • lay down cabbage as the first layer;
    • then the rice-and-meat mixture;
    • and on top of that, the sautéed vegetables with dill.
  • Keep repeating the layers until everything's used up — just make sure the top layer is the carrots and onion.
  • Pour the tomato-sour cream mixture over the layers and set the pot in the slow cooker. Choose the "Stew" setting, select "Vegetables," and set the time to 40 minutes. After the beep, leave the rolls on "Keep Warm" for 10–15 minutes.
  • Serve hot, cut into wedges like a cake.
