Cooking method

Step 1:
Grate the raw carrots on the fine side of a grater.

Add the sugar and lemon juice.

Transfer the mixture to a skillet and warm it over low heat, stirring constantly, until the excess juice has cooked off.

Add the shredded coconut (200 g).

Stir, then roll the mixture into walnut-sized balls.

Roll them in the remaining shredded coconut. Tip: you can also roll the carrot candies in tinted coconut, which makes them look especially festive on a platter. Crushed wafer crumbs are a good alternative to the coconut.
