Step 1:
Grate raw carrots on a fine grater.
Step 2:
Add sugar and citric acid.
Step 3:
Put the resulting mixture in a frying pan and heat over low heat, stirring constantly, until the excess juice evaporates.
Step 4:
Add coconut chips (200 g).
Step 5:
Mix and form walnut-sized balls.
Step 6:
Roll in the remaining coconut chips. Advice! You can also roll carrot candies in multicolored coconut chips, and then they will look especially festive on the dish. An alternative to coconut chips can be waffle crumbs.

You can diversify the taste of homemade "raffaello" by adding grated chocolate or chopped nuts to the carrot mass. And inside the carrot balls, you can "hide" peeled and roasted almonds.
