Chicken Gravy with Bell Pepper and Tomato Juice

  • Heat a saute pan, add the vegetable oil, then the butter, and add the ground chicken. Cook for 5 minutes, stirring. Add the finely chopped onion, the bell pepper, and the grated carrot. Cook for another 15 minutes, stirring. Stir in the sour cream and simmer over low heat for 15 minutes. Season with salt and pepper and add the bay leaf. Pour in a cup of tomato juice, salt to taste, bring to a boil, and let it cook another 5 minutes. Now let the ground-chicken gravy rest in the pan until it cools down; it only gets tastier that way. After that you can use it in all sorts of dishes. It's great spooned over mashed potatoes, or served with potato pancakes, croquettes, pasta, noodles, and so on.
