Chicken and Rice Burrito
A hearty snack the whole family will love, ready in just minutes! The burrito comes out really tasty and filling. The filling can be all sorts of things — swap in a different meat, use cooked beans instead of rice, or add some vegetables. Use your imagination and have fun with it!

Finely chop the onion, garlic, and chili pepper.

Saute the onion, garlic, and chili in vegetable oil for about a minute, then add the chicken shredded into strands (I used a boiled chicken thigh) and the tomato sauce. Stir to combine.

Add the rice and a little broth. Mix thoroughly and warm the mixture through for a few minutes.

Add the grated cheese and stir until the cheese melts.

Spread the filling on a tortilla and roll it up. My tortillas were small and I like a generous amount of filling, so honestly I couldn't quite roll mine into a neat wrap.

Before serving, if you like, toast the wrap in a dry skillet. Enjoy!
