Yet for all those little touches, a man will still reach for a hearty meal and a cozy home. A good piece of meat inspires him like nothing else.   • You'll want a meat tenderloin, pork or beef — either works. Trim off the membranes and cut the meat across the grain into pieces about ¾ inch (2 cm) thick. Pound the pieces with a meat mallet, then cut them into strips 1½–1½ inches (3–4 cm) long. Season with salt and pepper and sear in a well-heated skillet with some fat. Don't overcook. Chop the onion and mushrooms (button mushrooms work great). Add them to the meat, sprinkle everything with wheat flour, and cook for a couple of minutes. Now pour in the sour cream and tomato purée. To make the purée, scald the tomatoes with boiling water, peel off the skins, and press them through a sieve. Let the dish simmer for 5 minutes. Serve on individual plates and garnish with parsley. And now you're free to head off to the salon.
