This culinary recipe will appeal to all lovers of Italian cuisine. Risotto with oranges, sugar peas and saffron is a very tasty vegetarian meal.
Let's start the cooking process.
Peel the oranges, break into slices and carefully peel the slices from the skin. The juice should not be lost. Let's put it carefully in a cup. Peel the onion and finely chop it.
Take a frying pan, add olive oil to it and heat it. Put the chopped onion in the pan and fry. Wash the rice and add it to the onion.
Add saffron and orange juice to the vegetable broth. Pour a glass of broth with saffron into the pan, and we will stew rice. As the liquid evaporates from the pan, you need to add a little broth each time. The liquid in the pan should be so much that it slightly covers the rice.
After 20 minutes of stewing, add pea pods to the pan, and after another 2 minutes, add oranges. And after cooking the risotto a little more, you can remove the pan from the stove. The main thing is that the rice is cooked, but not too boiled.
At the end, season the risotto with pepper and salt. The dish is ready.
