Step-by-step cooking
Step 1:
How to make cucumbers in a hot way for the winter? Prepare the products. For pickling, take fresh cucumbers of small size with pimples - such fruits turn out to be the most delicious! Although I also prepare large cucumbers in this way - they are perfect for pickle, vinaigrette and other salads. If you don't know how fresh your cucumbers are, then put them in ice water for 2-3 hours and the cucumbers will gain elasticity.
Step 2:
Sterilize the jars in any convenient way. I put cans of water in the microwave for 5-7 minutes. But you can sterilize them in the oven at 100 degrees for 15 minutes. Or put a spoon in each jar so that the jar does not burst, pour boiling water and leave for 5 minutes. Then drain the water. Or just hold the cans on the ferry. Choose the method of sterilization that is convenient for you. Boil the lids for 5 minutes.
Step 3:
Wash all herbs and seasonings well. Put a horseradish leaf in each jar. It gives sharpness to cucumbers and makes them elastic.
Step 4:
Cherry, currant and oak leaf. They give a unique flavor.
Step 5:
Umbrellas or sprigs of dill. Nowhere without dill! He must be present.
Step 6:
Garlic cloves to your liking. You can add some other spices and seasonings: chili pepper rings, sweet pepper peas, bay leaf, estagon - add what you like.
Step 7:
Wash the cucumbers. Butts can be cut off, but I do not do this and cut them off just before serving.
Step 8:
Place the cucumbers tightly in the jar.
Step 9:
Prepare a brine from 1 liter of water and 2 tablespoons of salt, boil it.
Step 10:
Pour cucumbers.
Step 11:
Close the lid. A screw cap or a nylon cap is suitable. Leave the cucumbers for 2 days at room temperature. The brine will become cloudy - this means acid is produced, which will help the preservation of the workpiece. Put the jars in a cool place: cellar, basement, refrigerator and store cucumbers there.
Step 12:
Sterilization is not required, but remember to store in a cool place. Bon appetit!
Cucumbers turn out crispy, spicy, very tasty!
So that summer supplies are guaranteed to delight you throughout the cold season, read the basic rules, secrets and life hacks about preparations for the winter.
Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
