Cooking method
I think that everyone remembers the famous phrase from the movie "Ivan Vasilyevich changes his profession" - "Overseas caviar – eggplant!". I offer you an original culinary recipe that will allow you to enjoy a truly royal meal at any time of the year – eggplant caviar in Greek.
Wash the eggplants and cut them into circles, cut the onion into thin plates. Wash the sweet capsicum and remove the peduncle with the seed carrier. Then put it in boiling water for 3-4 minutes, put it in a colander, then pass it through a meat grinder.
Red ripe tomatoes should also be washed and the stalk removed. Then pass through a meat grinder and boil up to half the volume. Put the vegetables in an enameled saucepan, add sugar, salt, finely chopped herbs, ground spices. Mix all this thoroughly.
Heat the mixture to a temperature of 70 degrees, not forgetting to stir constantly. After that, put the eggplant caviar in Greek into sterilized hot jars and close the lids. Bon appetit!
