Step 1:
How to make a mannikin on kefir without eggs? Prepare the products. Take kefir with a fat content of 2.5%. Take it out of the refrigerator in advance, by the beginning of the cooking process it should be at room temperature. You can reduce the amount of sugar, the mannikin turns out to be noticeably sweet. Take a small pinch of vanilla, in large quantities it can be bitter. Instead of vanilla, you can take a teaspoon of vanilla sugar.
Step 2:
Take a large dough bowl. Pour semolina and sugar into it, add soda and vanilla. I also always add a pinch of salt to any sweet pastries — it acts as a flavor enhancer. Mix the dry ingredients with a whisk.
Step 3:
Pour kefir into the dry ingredients, while actively working with a whisk. Stir the mixture until it is completely homogeneous — this will happen very quickly, the dough is well kneaded and obtained without lumps. Soda will immediately react with the acid contained in kefir — you will see how the dough will bubble. This means that the release of carbon dioxide has begun, which will raise our pastries and make them lush.
Step 4:
Take a suitable baking dish. Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with butter or margarine. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn. I have silicone, I immediately poured the dough into it.
Step 5:
Preheat the oven to 200°C. Put the form with the dough in it. Bake the mannikin from 45 minutes to an hour. Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. My mannikin was baked for 50 minutes, but it was possible to hold it longer so that it became more ruddy.
Step 6:
Remove the finished mannikin from the oven and cool completely. Remove it from the mold and serve it to the table. You can sprinkle the mannikin with powdered sugar and decorate to your liking. Enjoy your meal!

When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the mold (or baking sheet) can be taken out of the oven.
