Step 1:
How to make a sweet cake on kefir in the oven in a hurry? Very simple. First, prepare the necessary ingredients according to the list. Take the flour of the highest grade. Eggs are large, selected. If the eggs are small, take 3 pieces. You can also adjust the amount of sugar to suit your taste. The fat content of kefir is 2.5-3.2%.
Step 2:
Wash the berries and fruits. Cut the peach, apricot and plums into slices. The fruits and berries specified in the recipe can be replaced or supplemented to your liking. For example, take a pear, an apple, a currant. Instead of fresh fruits and berries, you can use frozen ones.
Step 3:
Beat eggs with sugar and vanilla sugar until fluffy. The mass should increase in volume by 3-4 times.
Step 4:
Pour in the kefir at room temperature, pour in the lemon zest. Mix everything together.
Step 5:
Sift flour through a sieve together with baking powder and pour parts into the dough.
Step 6:
Mix with a mixer at low speed or with a whisk. It is important that there are no lumps left in the dough. Depending on the moisture content of the kefir and the size of the eggs, more or less flour may be needed. Look at the consistency - the dough should be of medium density. Thick, but fluid.
Step 7:
Cover the baking dish with a diameter of 18-20 cm with parchment and grease with butter. Pour most of the dough on the bottom. Spread fruits and berries on top. You can stack the fruits not in one layer, but also in a bowl, mix them into the dough and put everything together in a mold.
Step 8:
Spread the remaining dough on top and smooth it out. Bake the pie in a preheated 180 ° C oven for about 30-40 minutes. Check readiness with a skewer – it should come out of the dough dry. Determine the exact time and temperature of baking according to your oven.
Step 9:
Remove the finished cake from the mold, cool, sprinkle with powdered sugar if desired and serve to the table. Bon appetit!
