Step 1:
How to bake a delicious delicate airy cupcake in the oven? Very simple! First, prepare the necessary ingredients according to the list. For the test, all products must be at room temperature. Take kefir with a fat content of 2.5% or higher. Vegetable oil - any, I have sunflower.
Step 2:
Chop the walnuts finely.
Step 3:
Wash the raisins, clean them from the tails. If the raisins are very dry, pour boiling water over them and leave for 10 minutes, then drain the water, dry the raisins.
Step 4:
Beat eggs with sugar into a fluffy foam.
Step 5:
Continuing to beat, pour in kefir at room temperature and vegetable oil.
Step 6:
Pour in the flour sifted with baking powder and mix until smooth. Do not rush to pour all the flour at once. Focus primarily on consistency. You should get a thick, flowing dough.
Step 7:
Mix the raisins and nuts into the dough.
Step 8:
Pour the dough into a greased cake pan. There is a lot of dough, plus a streusel, so choose a form that can accommodate everything. The inner size of my rectangular shape is 22 by 10 cm. The diameter of the round shape will fit 20-22 cm.
Step 9:
Now prepare the necessary ingredients for the streusel.
Step 10:
Put the diced cold butter in the blender bowl, add flour, sugar and cocoa. Whisk until fine crumbs are obtained. You can beat everything not in a blender, but rub it with your hands, but in a blender it is much faster.
Step 11:
Spread the chocolate streusel evenly on top of the dough. Put the cupcake in a preheated 180 ° C oven for 45-50 minutes. The exact baking time depends on your oven and the thickness of the dough. Check the readiness of the cake with a skewer – it should come out dry. Remove the finished cupcake from the oven and leave to cool in the mold.
Step 12:
Then transfer the cupcake to a dish, cut into pieces and serve to the table. Bon appetit!
Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
