Step 1:
How to bake mackerel with rice in the oven? Prepare the products. Take large carrots and onions. Steamed rice is suitable — it will turn out crumbly in the finished dish. When choosing mackerel, make sure that the fish are undamaged and there is not too much ice. If the fish is large, take 2 for this amount of food. Be guided by the weight specified in the recipe. Any odorless oil will do.
Step 2:
Peel and rinse the onion and carrot. Grate the carrots on a coarse grater. Cut the onion into small cubes. In this form, the vegetables will fry faster and give the rice a beautiful shade.
Step 3:
For frying, take a frying pan in which vegetables and rice will fit. Heat a frying pan, carefully, so as not to get burned, pour vegetable oil on it. Since carrots are cooked longer than onions, fry grated carrots first. Fry over medium heat, stirring occasionally, for about 2 minutes.
Step 4:
When the carrots start to get softer, put the chopped onion in the pan and fry for another 3 minutes over medium heat. Be sure to stir so that the vegetables are evenly fried and do not dry out.
Step 5:
Rinse the rice in several (5-7) waters to wash the starch well. This will make it more crumbly. Drain the rice with water.
Step 6:
Add the washed rice to the vegetables and mix until smooth.
Step 7:
Add a little salt and pepper. Stir-fry for another 3 minutes. Frying rice will additionally make it crumbly.
Step 8:
For baking, use a heat-resistant mold with high sides. I have a glass 30*20 cm. Transfer the fried vegetables and rice into it.
Step 9:
Fill with water and mix a little so that the water evenly spreads over the dish and the rice does not burn during the baking process.
Step 10:
Prepare the mackerel. You can not defrost it in advance, but get it out of the freezer before cooking — so it will be easier to carve the fish. Clean the insides, then rinse well in running water and cut into 4-5 portions.
Step 11:
Add a little salt to the mackerel and season with spices and sour cream. If you take a ready-made spice mixture that contains salt, reduce the amount of salt added. Otherwise, you can over-salt and spoil the taste of the dish.
Step 12:
Turn on the oven to preheat to 200 degrees. Put the fish pieces on top of the rice with water.
Step 13:
Cover the baking dish with foil and send it to the middle shelf in the oven. After 1 hour, the mackerel and rice will be ready. The cooking time may vary depending on the capabilities of your oven. Carefully, so as not to get burned, remove the foil. If there is no water, you can serve it on the table. Bon appetit!
Serve mackerel with rice for dinner or lunch hot. You can add your favorite sauce or a fresh salad. But I love this dish just without anything.
