Step 1:

Step 2:
Rub the Podcherevok with salt.
Step 3:
Rub crushed garlic into the meat.
Step 4:
Rub with a dry spice mixture.
Step 5:
Wrap the Podcherevok with a roll and pull it with twine.
Step 6:
Wrap in foil not tightly.
Step 7:
Put in a preheated 180 degree oven for 1 hour. Turn off the oven and let it cool without removing the roll. If you want a ruddy crust, expand it and turn on the convection or grill.
Step 8:
Serve the podcherevka roll as an appetizer with pickled cucumber, horseradish, mustard, make sandwiches. Bon appetit!
