Step 1:
How to make cottage cheese cakes? The most suitable is 5-9% cottage cheese, grained or softer in packs, farm. It is not necessary to take a children's homogenized one - it is too wet. Fat-free is possible, but on the contrary it will be too dry, and the tortillas will not be so tender. Cottage cheese and eggs can be taken immediately from the refrigerator, which speeds up the process.
Step 2:
Wash and wipe the eggs thoroughly. Separate 4 proteins, add a small pinch of salt and start whipping with a hand whisk or mixer at low speed. Gradually pour in the sugar. Do not beat too much, it is enough until the foam appears and the sugar dissolves. By the way, you can also use frozen proteins, which often remain from other recipes, only they need to be thawed.
Step 3:
In a deep bowl, mash the cottage cheese with a fork so that there are no lumps left, it is not necessary to punch with a blender. Add the whipped whites with sugar. Mix everything with a fork.
Step 4:
Sift the flour and soda into a separate bowl. Stir until the soda is evenly distributed. Attention! 1 tsp. soda cut, i.e. without a slide. It is not necessary to extinguish the soda beforehand. Soda will begin to be extinguished in the dough with lactic acid, which contains cottage cheese and due to the high temperature in the oven. You can skip this step for optimization, especially for experienced cooks, do as you like.
Step 5:
Add the flour sifted with soda to the curd-protein mass in 2 doses, mixing well each time. (If you sift the flour directly into the cottage cheese, add the soda with the last part of the flour). Stir well.
Step 6:
The dough should be thick and sticky. But it is quite loose and tender. Try not to add flour anymore. Only if the cottage cheese turns out to be wetter.
Step 7:
Cover the baking sheet with good quality parchment, if in doubt, brush a little with refined vegetable oil. Or use a non-stick reusable mat like mine. Fill the dough with one tablespoon with a large slide. Spread at a distance, the dough will rise when baking. Flatten the top with a spoon, form cakes, trim the edges. Make the thickness of the cake about 1.5 cm .
Step 8:
Bake in a preheated oven at t 220 ° C for about 17 minutes, at medium level, top-bottom mode. Until a slight blush appears. Due to the peculiarities of the ovens, the time may vary slightly. But try not to overdo it, otherwise they will not be so tender. Remove the finished cottage cheese tortillas from the baking tray on the grill or in a spacious container. Cover with a light towel.
Step 9:
Serve with sour cream or condensed milk, jam. Delicious both warm and cooled. They remain soft the next day. If you haven't eaten everything, cover it and put it in the refrigerator. Preheat a little before serving.
Cottage cheese tortillas turn out to be no less delicious than ordinary cottage cheese or cheesecakes, as you like. The taste is slightly different, but try to diversify the usual dish.
This is a dish for every day that can be prepared quickly with a minimum of effort. Family for breakfast or a small snack with tea or other drink.
