Cooking method
1. Prepare the carcass for baking:
- wash, dry with a paper towel;
- in a small container, mix saffron, ginger powder, coriander, black and allspice, basil and oregano;
- rub the duck with salt and a mixture of spices both inside and outside, leave for 20-30 minutes.
2. Wash apples and oranges with hot water, cut into large slices.
3. We fill the carcass with fruit, sew up the hole.
4. We put the duck in the sleeve for baking, we will also put the remaining fruit here. We tie the sleeve on both sides.
5. Preheat the oven to 180 degrees and bake the duck for an hour and a half.
6. 5-10 minutes before the end of cooking, take out the duck, cut the sleeve, and lubricate the carcass with melted fat and honey. We send them back until they are ready.
We serve the duck on the table hot. Enjoy your meal!
