Step 1:
Ingredients. Tomatoes in their own juice are crushed into puree. Since there were no breadcrumbs on the farm, I dried slices of white bread instead and ground them into crumbs.
Step 2:
For the sauce. Finely chop the onion and garlic.
Step 3:
Fry onion and garlic in vegetable oil until soft.
Step 4:
Add the grated tomatoes (I rubbed them additionally through a sieve) and boil until a thick sauce. At the end, season the sauce with salt, sugar, herbs (fresh or dried to your taste).
Step 5:
Remove the skin from the chicken thighs and cut out the bone. To get the bone, we make deep incisions along the bone, push the knife under the bone and separate it from the meat. If desired, each thigh can be cut into 2 parts.
Step 6:
Let's do the breading. Take 3 bowls, break 2 eggs into one, shake them lightly with a fork and season with salt and pepper. In another bowl, pour the flour, and in the third - breadcrumbs (I added a little grated parmesan to the breadcrumbs, but this is not necessary). Lightly season the chicken with spices, roll in flour, then in egg and breadcrumbs.
Step 7:
Fry in a frying pan until fully cooked, about 4-5 minutes on each side, depending on the thickness of the meat. We put the fried chicken in a suitable form.
Step 8:
Cover each piece with sauce on top.
Step 9:
And sprinkle with grated cheese (choose the kind that melts well), put the chicken form in the oven preheated to 200 for a few minutes to melt the cheese. Served with mashed potatoes and vegetables. Bon appetit!
