The fish must be thoroughly washed and cleaned before cooking. Gut the insides, remove the gills and rinse thoroughly, especially the places near the head where the gills were.

Put the cleaned fish on a sheet of foil. Add salt, lightly sprinkle with ground coriander and black pepper.
