Preparing mayonnaise:
All ingredients should be at room temperature.
In a bowl, break an egg, add salt and sugar.
Beat the ingredients with a whisk until smooth.
Without stopping whipping, pour in sunflower oil in a thin stream until the mayonnaise acquires the desired consistency.
Pour in lemon juice and beat until smooth. Add lemon zest (grated on a fine grater) and beat everything again.
The finished mayonnaise is cooled and can be stored in the refrigerator, in a hermetically sealed container, for about a week.
Cooking capelin:
Wash the fish, clean it, cut off the heads and tails. Put it on a baking dish, greased with vegetable oil, pepper, salt.
Place the onion thinly sliced into half rings on top.
Then a layer of greenery.
In a bowl, mix mayonnaise with sour cream.
Gently spread over the surface of the fish. Preheat the oven to 180C, bake until golden brown for 30 minutes.
