Step 1:
How to make a simple and quick cake on kefir with jam? Prepare the necessary ingredients for this. Kefir and jam I measure in a glass - 200 ml. Sift the flour through a sieve in advance to saturate it with oxygen. Thanks to sifting, the finished product turns out to be more airy. Jam for pie can be used any, but not very liquid. I have plum jam. It will also be delicious with cherry or black currant jam. Kefir I have 1% fat content.
Step 2:
In a whipping bowl, combine the eggs with sugar and whisk until fluffy.
Step 3:
Then pour kefir into the bowl and add soda. Mix everything with a whisk. When mixing, soda will react with kefir and bubbles will immediately appear in the dough.
Step 4:
Then mix the jam into the dough. If your jam is dark, like mine, then the dough will change color.
Step 5:
Gradually add flour and knead the dough. Flour may need a little more or less. If the jam was more liquid, then the dough will take a little more flour. Be guided by its consistency.
Step 6:
The finished dough is not liquid and not very thick. About like pancakes.
Step 7:
Cover the bottom of the split mold (20 cm) with parchment for baking. Put the prepared dough into a mold and put it in the oven, preheated to 180 degrees, for 40-50 minutes. When baking, be guided by your oven.
Step 8:
The cake will rise well and become golden in color. Pierce it with a skewer and immediately pull it out. If it is dry, the cake is ready.
Step 9:
Remove it from the mold and leave to cool slightly. By the way, such a pie can be used as a sponge cake for a cake. There is a slight sourness from the jam in the taste, which will be perfectly combined with sour cream. The cake can be sprinkled with powdered sugar or sprinkled with chocolate. Have a nice treat!
Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
