Step 1:
How to make classic oatmeal cookies according to the USSR GOST? Prepare all the necessary ingredients. Take the flour of the highest grade. Margarine can be replaced with butter. Personally, I use margarine more often for making cookies. With a creamy good margarine, cookies turn out tastier, besides it is cheaper. Raisins should be pitted. Remove the margarine from the refrigerator for 1-1.5 hours. Instead of molasses, you can take honey or seedless jam.
Step 2:
To remove the oil that is used to process dried fruits before selling, pour the raisins with hot, about 70 ° C, water. Do not use boiling water, the raisins will cook in it. After 10 minutes, drain the water through a sieve, and dry the raisins.
Step 3:
If you don't have ready-made oatmeal, make it from oatmeal. Simply grind the required amount in a coffee grinder or blender. By the beginning of the dough preparation, the margarine should already become soft, but not spread. Put all the ingredients into the blender bowl, except flour (both types), soda and water.
Step 4:
Beat everything until smooth. If small pieces of raisins remain, it's okay, it won't affect the taste.
Step 5:
Transfer the resulting mass into a deep bowl with a rounded bottom, in which it is convenient to knead the dough. Rub it with a spoon.
Step 6:
Heat the water to 50 degrees. If you do not have a special cooking thermometer, the desired water temperature can be obtained as follows. Mix boiling water with ice boiled water in a ratio of 1:1. Add oatmeal and warm water to the dough. Mix well until smooth.
Step 7:
Sift wheat flour to remove small debris and saturate it with oxygen. Pour half of the flour into a bowl. Add the soda and mix so that it is evenly distributed over the dough. Since the properties of flour of the same grade, but different manufacturers may differ, in order to get the desired consistency, add the remaining flour in small portions. The dough should turn out soft, tender, gather into a ball and not spread out.
Step 8:
Turn on the oven to preheat 180 degrees. Divide the dough into 8 equal parts. Roll 2 balls from each one.
Step 9:
Use a large baking tray for baking. Cover it with parchment and evenly distribute the dough balls over it. Roll out each ball with a rolling pin or flatten the flat bottom of the glass to a dough thickness of 4-5 mm.
Step 10:
Bake cookies on the middle shelf of a preheated oven on the top-bottom mode for 15-20 minutes at a temperature of 180 degrees. The cooking time depends on the capabilities of your oven. Check the readiness of the cookies by appearance, it should be slightly browned. Remove the finished cookies from the oven, cool and serve. Enjoy your meal!
Oatmeal cookies according to GOST are soft inside and crispy on top. The cooled cookies become softer and on top. But it doesn't make it any less delicious.
