Step 1:
Prepare the ingredients for the pies. The filling can be made to them any to taste and desire. Let's start with the preparation of yeast dough on kefir. We will make the dough in a quick, safe way. Kefir is heated to 30-35 degrees. You can burn it in a microwave oven or in a water bath. The temperature can be determined with a finger, if there is no thermometer, the finger should be comfortable, hot, but tolerable.
Step 2:
Pour warm kefir and vegetable oil into a bowl. Add sugar and salt to them, mix until the dry ingredients are completely dissolved.
Step 3:
We sift the flour, it's better to do it twice so that the flour becomes more airy, saturated with oxygen, then the pies will turn out softer and tastier. Add dry yeast to the flour, mix. Pour the dry ingredients (a mixture of flour and yeast) into a bowl with a liquid mixture. Knead the dough with a spoon, forming a ball from it. Then we spread it on the table, sprinkled with flour, and continue to knead with our hands for about 10 minutes.
Step 4:
Yeast dough loves hands, so you need to devote more time to this step. Then put the dough back in the bowl, cover with a towel on top and leave for half an hour in a warm place.
Step 5:
Meanwhile, let's do the stuffing. You can cook any filling, delicious pies are obtained with green onions and egg, with sauerkraut, sweet filling is also good. Shred the white cabbage. Finely chop the onion.
Step 6:
Fry the onion in vegetable oil in a frying pan, add the cabbage. Pour a little water into the pan and simmer the cabbage over medium heat for about 25 minutes. Add salt, sugar, ground black pepper to taste. Mix it up. Turn off the fire. Let the cabbage filling cool down a little.
Step 7:
Put the finished dough on the work surface. We divide it into equal pieces, the size of which depends on the size of the finished pies you want, but the pies turn out more beautiful, if not very large.
Step 8:
Roll out each piece into a flat cake with a thickness of no more than 0.5 centimeters. In the middle we put a little filling. We pinch the edges.
Step 9:
Spread the pies on a greased baking sheet. We give them a little rise in a warm place. Grease the pies with beaten chicken egg on top. Put a baking sheet with pies in a preheated 180 degree oven and bake for about 25 minutes, until golden brown.
Step 10:
We take out the pies and serve them with tea or milk. Bon appetit!
