Step 1:
Break the egg into a bowl and beat with a fork. For the dough, we will need only half an egg. The rest will go to greasing the roll before baking.
Step 2:
To prepare the dough, we will need: 220 g of flour; 120 ml of water; ½ egg; 2 tablespoons of vegetable oil and a pinch of salt.
Step 3:
Combine flour, warm water, half a beaten egg, vegetable oil and salt. Knead a smooth homogeneous dough.
Step 4:
Form a ball from the dough, wrap in a film and leave for 2 hours in the heat. Be sure to stand the dough for the specified time, otherwise it will not stretch properly.
Step 5:
To prepare the filling, we will need: 500 g frozen cherries; 120 g sugar; 80 g ground almonds and 50 g breadcrumbs.
Step 6:
Put the cherries in a colander in the evening and leave to defrost. All the juice should drain from the berries, then the filling will not flow when baking.
Step 7:
Combine and mix sugar, ground almonds and breadcrumbs.
Step 8:
Dust the dough with flour and roll it out with a rolling pin first. Then put the dough on a towel and slowly stretch with your hands from the center to the edges, then the edges themselves. The dough should be stretched as thin as possible. If the dough breaks in some places when pulling, you can easily pinch this area. As a result, you should get a more or less even rectangle.
Step 9:
Lubricate the entire surface of the dough with a brush with vegetable oil.
Step 10:
Sprinkle the dough evenly with sugar-almond mixture, not reaching the edges of 1 cm.
Step 11:
Spread the cherries evenly on top.
Step 12:
Using a towel, gently roll the dough into a tight roll along the short edge, turning up the side edges and carefully pinching the seams so that the filling does not leak out.
Step 13:

Step 14:
Put the strudel on the baking sheet seam down. Grease with the remaining beaten egg. Bake the cherry strudel for about 40 minutes at 180 ° C.
Step 15:
Serve strudel with a scoop of vanilla ice cream. Bon appetit!
