Step-by-step cooking
Step 1:
We take the necessary products and start cooking the dish.
Step 2:
We prepare the dough in the sourdough way. Lightly heat a tablespoon of milk and mix it in a small deep bowl with two teaspoons of sugar, add the same amount of flour and yeast, mix everything and let it come up for about 15 minutes.
Step 3:
Pour the sourdough into a large saucepan, pour in lukewarm kefir and milk, add sour cream, egg, salt and butter. Mix everything thoroughly.
Step 4:
Now gradually introduce the sifted flour and knead the dough. The consistency of the dough should resemble bread: it should be soft enough, but not stick to your hands. Cover the pan with the dough with a towel and put it in a warm place to rise for 40-50 minutes.
Step 5:
While the dough is coming, let's do the filling - it's not difficult at all. Cut the beef pulp into large pieces and then twist it in a meat grinder or grind it in a blender. Add the washed and chopped herbs, salt and spices. Mix it up. Minced meat is ready.
Step 6:
When the dough is suitable, we put it on the table, grind it and divide it into three equal parts with a knife.
Step 7:
From each part we form a round cake, stretching the dough with our hands or rolling it out with a rolling pin.
Step 8:
We put the filling in the shape of a ball in the center.
Step 9:
Then we pull the dough on the filling from all sides and seal the edges. Gently knead the pie so that it resembles a thick pancake in shape. We make three blanks.
Step 10:
Now let's decide how to bake an Ossetian pie with meat, the recipe of which we are considering. We transfer the blanks to a baking sheet and send them to the oven for 20 minutes at 200 C. If you have a small baking tray, then bake one pie at a time. We serve it to the table hot!
Ossetian cuisine is famous for its pies, among which the traditional Ossetian beef pie "Fydzhin" stands out especially. The dough is absolutely universal, it can be used to make pies with potatoes and mushrooms, cheese, spinach, herbs and spices, or simply with cabbage. The culinary recipe of this amazing pie was told to me at a seaside resort in a cozy coastal cafe, where they served a lot of excellent food. I like to cook it in winter, because it reminds me of the warm southern sun.
