If you don't have much time, then put the eggs in warm water, and pour some hot water into the kefir. Take refined, odorless vegetable oil.

    Wash and then wipe the eggs dry. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush. Then break the eggs into a bowl, add sugar and beat well, preferably with a mixer. You should get a lush, light mass.

    Pour kefir into the eggs, add butter, salt and soda, mix well, you can just whisk.

    Add the pre-sifted flour in portions. Do not pour all at once, pour a little, mixing the dough well after each addition. As a result, you should get a mass similar in consistency to fatty sour cream. Too thick dough makes cupcakes tough. The amount of flour given is approximate, focus on your dough.

    Lubricate the silicone mold a little with vegetable oil. You can put special paper inserts for cupcakes, as I did, then you don't need to lubricate. Fill them with dough for 2/3 of the volume, because the cupcakes should rise well. From this amount of dough I got 12 cupcakes. You may have a different amount, it depends on the size of your forms.

    Part of the cupcakes I made in separate molds. Bake the cupcakes in the oven preheated to 180 degrees for 15-20 minutes. Cupcakes should rise well and get golden. Check readiness with a wooden stick or toothpick. Ready-made cupcakes can be sprinkled with powdered sugar.

You can bake these cupcakes with various additives. It will be very tasty to add raisins, dried apricots cut into small pieces, prunes or candied fruits. In summer, put fresh berries in the dough, in winter use frozen ones, which will need to be pre-thawed and drained of liquid.
You can make such cupcakes with stuffing. Pour half of the dough into a mold, put a spoonful of jam, jam or a slice of chocolate, and pour the rest of the dough.
On top of the cupcakes, you can decorate not only with powdered sugar, but also pour them with melted chocolate or protein glaze.
