Step 1:
Prepare the dough: in a bowl, mix the yeast, 20g of sugar and a tablespoon of flour, pour the preheated (can be in the microwave) milk, mix, leave for 15 minutes until the yeast swells. Melt the butter, cool it. In a bowl with sourdough, beat in an egg, pour in the melted butter, add sugar (30g), salt, stir until the sugar dissolves. Pour in the sifted flour, do it in batches, add if necessary, knead the dough.
Step 2:
It turns out an elastic dough, slightly sticky to the hands. Put it back in the bowl and put it in a warm place to rise for 1.5 hours. We mince it, let it rise again. The work surface is sprinkled with flour, the dough is rolled into a rectangle.
Step 3:
Lubricate it with the remains of melted butter, sprinkle with sugar.
Step 4:
Roll the dough into a roll.
Step 5:
Cut into pieces-buns blanks.
Step 6:
We put them in a greased form, leave them in the heat for 20 minutes to rise.
Step 7:
Grease them on top with beaten egg yolk.
Step 8:
Preheat the oven to 180 degrees. We put the buns to bake for 30 minutes (depending on the operation of the oven). Prepare sour cream filling: whisk sour cream with sugar (50g). When the buns become ruddy, take them out, turn off the oven.
Step 9:
We will pour sour cream filling on top of the buns and put them in the oven, not including it, for 15 minutes.
Step 10:
During this time, the sour cream filling will turn into a delicate sweet fudge.
