Step 1:
How to bake a fluffy cake on kefir without using eggs? Very simple! First, prepare the necessary ingredients according to the list. Take the flour of the highest grade. Kefir can take any fat content, but keep in mind that fat content affects the amount of flour. Adjust the sugar to your liking. You can take any vegetable oil. I have olive oil.
Step 2:
Take any berries or fruits for the pie to taste. Apples, plums, cherries, cranberries, peaches, currants are suitable. I used frozen pitted cherries. It needs to be thawed beforehand and drain the juice. Dry the berries. The same should be done with other frozen fruits and berries. I put the berries to defrost in the evening in a colander to drain all the juice from them. Then the dough will not "float" from excess moisture.
Step 3:
Add sugar and vegetable oil to kefir at room temperature. Mix thoroughly with a whisk until the sugar is completely dissolved.
Step 4:
Pour in the soda and mix again. The dough will start to foam strongly. Is it possible to replace baking soda with baking powder? This makes no sense, because baking powder is added to the dough, in which there is no acid. There is acid in the kefir test, so the reaction with soda will be quite violent.
Step 5:
Add the sifted flour in parts, mixing the dough thoroughly each time until smooth. Depending on the moisture and fat content of kefir and the quality of the flour itself, more or less flour may be needed. Therefore, focus on the consistency.
Step 6:
The finished dough should turn out thick, but flowing and slowly drain with a continuous ribbon from a spoon or whisk.
Step 7:
Pour part of the dough into a baking dish lined with parchment and greased with butter (Ø 18-20 cm). Spread the prepared cherries on top. You can immediately mix all the cherries into the dough and put them in a mold, but I prefer to lay it out in two layers.
Step 8:
Spread the remaining dough on top and smooth it out. Put the remaining cherries on top. Bake the pie for about 40 minutes in a preheated 180 ° C oven until golden brown. The exact time of baking the cake depends on your oven. Bon appetit!
Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
