Cooking method
We will prepare all the necessary ingredients for making cookies on proteins. First of all, we will need proteins. They must be necessarily chilled (in any case, do not take eggs out of the refrigerator in advance!). Now we break the eggs, separating the whites from the yolks (yolks will not be used in this recipe). Put the proteins in a deep container and whisk to a fluffy foam, gradually adding vanilla sugar. To make a protein cream, we continue to whisk the proteins and gradually add sugar.
Then carefully pour coconut chips and flour sifted through a sieve into the resulting protein mass, slowly and carefully mix with a spoon from top to bottom.
Cover the baking sheet with baking paper. Now we put the dough into a pastry bag and squeeze out small round cookies or spread the dough with a regular spoon on baking paper.
Put the baking tray with cookies in preheated to 180-200 °Remove from the oven and bake them until light golden brown for 15-20 minutes. It is important not to trace the moment when the cookies are ready, because they can burn.
We take the baked cookies out of the oven and cool them completely on a baking sheet, because the freshly baked cookies are very soft and tender, so they will hardly be removed from the paper and at the same time lose their rounded shape, because they will "crumple".
Cookies turn out to be very tasty, and even more pleasant is that its preparation takes very little time and the cooking process itself is very easy that even a beginner can handle it. Protein cookies turn out to be beautiful, fragrant, tender and airy. The light vanilla flavor and coconut chips make it even tastier. Such cookies are ideal not only for a cup of tea or coffee, but are perfect for a snack with a mug of milk.
The most important thing is to beat the protein well and slowly add the loose ingredients so as not to break the texture of the protein dough.
