Step-by-step cooking
Step 1:
In order to cook pumpkin cupcakes from pumpkin, you will need a certain amount of pumpkin (any one will do), good quality butter, natural, granulated sugar, premium wheat flour, natural fresh milk, a little soda, salt and, possibly, sweet spices to taste. Also, if desired, you can use powdered sugar to decorate ready-made pumpkin cupcakes.
Step 2:
Wash the pumpkin, cut it into pieces, remove the core with the seeds, carefully cut off the skin. If the pulp is large, then cut it into smaller pieces. Put the prepared pumpkin on a sheet of foil and wrap it. Bake in the oven, preheated to 190 degrees, until the pumpkin pulp is soft. The cooking time of the pumpkin will depend on the variety, but it will take 30-60 minutes.
Step 3:
Cool the finished soft pumpkin and use a blender (immersion or bowl) to grind into a gentle homogeneous puree. Set the finished pumpkin puree aside for a while.
Step 4:
In a large bowl, whisk the softened butter with half the sugar and fine salt.
Step 5:
Add pumpkin puree to the oil. Then add warm milk, stirred with the remaining half of the sugar until the crystals are completely dissolved.
Step 6:
Pour in the flour sifted with soda. Add spices to taste and as desired (for example, cinnamon, nutmeg, vanilla). Knead a homogeneous dough.
Step 7:
Fill the metal molds with paper ones, fill them with dough.
Step 8:
Place in a preheated 190-200 degree oven and bake for about 20 minutes.
Step 9:
Ready-made cupcakes must be removed, cooled and, if desired, decorated with powdered sugar when serving.
