Step 1:
Prepare the specified products. Butter should be of good quality, with a fat content of at least 72%. Jam can be of any variety, but apple or quince is preferable - its sourness in taste emphasizes the sweetness of the shortbread dough.
Step 2:
Move the butter into a deep container, melt in a water bath or in a microwave oven almost to a boil.
Step 3:
Pour into a deep bowl and cool a little, then drive in the same chicken egg, add granulated sugar, a pinch of salt. Carefully beat the entire contents of the container, trying not to splash everything around.
Step 4:
Sift wheat flour into a bowl, knead a tight, plastic shortbread dough.
Step 5:
If you have free time, then wrap a ball of dough in plastic wrap and put it out in the cold for about 20-30 minutes. If there is no time, then immediately start rolling and baking.
Step 6:
Lay parchment paper on the work surface, put the shortbread dough on it and roll it out into a rectangular layer 1 cm thick - it does not have to be even, since the edges will be cut off after baking and will go to crumbs.
Step 7:
Bake a layer of dough in the oven at 200 C for about 12-15 minutes, not browning much. Cool it down.
Step 8:
Cut off the edges, turning the baked dough into a rectangle or square.
Step 9:
Cut into strips 10*5 cm. From this volume of products, you will get 4 strips and trimmings for crumbs - put them in a deep container and chop them with your hands or in the bowl of a food processor.
Step 10:
Lubricate two strips with cooked jam, applying it in a thick layer.
Step 11:
Put the two remaining strips on top.
Step 12:
Lubricate the jam again, hold the edges of the cake with a knife, removing excess jam. Sprinkle with crushed crumbs on top. Decorate the dessert to your liking and serve it to the table with tea or coffee.
