Step 1:
Prepare the specified products for cookies. Wheat flour, pre-sift it. Chicken eggs, according to the GOST recipe, it is recommended to take them from 1. All you need from a lemon is the zest. To prepare cookies, also prepare a mixer, a pastry bag, a baking tray for baking cookies.
Step 2:
In a deep bowl, break the raw chicken eggs, add powdered sugar. Mix the powdered sugar and eggs with a spoon. Instead of powdered sugar, you can take fine granulated sugar, but you will need to make sure that it completely dissolves when kneading the dough.
Step 3:
Then take a mixer and beat the eggs with powdered sugar until the volume increases 2-3 times. This may take 10 to 20 minutes. As a result, you should get a thick white mass.
Step 4:
Wash the lemon very thoroughly with water (you can use special means for washing fruits) and dry it with a towel. Grate the lemon zest with a fine grater and add to the dough. Add the sifted wheat flour to the dough.
Step 5:
With a mixer, stir the dough until all the ingredients are combined. The dough should turn out homogeneous and thick.
Step 6:
Put the dough in a pastry bag and cut off the tip no more than 1 cm. Grease the baking sheet with vegetable oil or cover with baking paper. Remove the dough from the pastry bag, leaving a space between the cookies 1.5 - 2 centimeters.
Step 7:
Sprinkle each cookie with sugar. Remove the baking tray with cookies in a warm, dry place for 2 hours (I put it in the oven with the light bulb only on).
Step 8:
During this time, a thin brittle crust forms on the surface of the cookies. Turn on the oven to preheat 180 degrees (without cookies). When it warms up, put the baking sheet in the oven for 5-6 minutes.
Step 9:
Remove the finished cookies from the oven and cool. Serve the finished cookies with a glass of milk, tea or coffee. The cookies turn out to be very tasty sweet with a clear lemon flavor, and thanks to their appearance, they are very original and festive. I recommend it!
