Cooking method
1.Butter should be removed from the refrigerator in advance so that it has a soft consistency.
2. Turn the oven on 180 degrees Celsius.
3. Separately, sift good quality rice flour into a bowl. It should be white and finely ground. Add a pinch of salt and baking powder to it so that the dough turns out to have a lush and airy structure.
4. Transfer the butter to the bowl of a blender or food processor. Pour in the same fine sugar, vanilla sugar and beat with a mixer at low speed until fluffy. It is necessary that the sugar is completely dissolved in the creamy mass.
5. Then break the eggs into the bowl of a mixer and mix the mass again until smooth.
6. Pour dry ingredients (flour) into liquid ones in small portions in 2-3 stages. At the same time, after each stage, mix the resulting mass with a mixer for the best result.
7. Add small candied fruits to the resulting dough for a more varied taste. Candied fruits can be replaced with any dried fruits (raisins, dried apricots), fresh berries, nuts or pieces of chocolate. Mix the dough again with an ordinary tablespoon so that the filling is evenly distributed inside. The dough itself eventually comes out quite thick in consistency.
8. Put paper dough molds in special molds. Then spoon over the cupcake batter, filling the molds with it about 2/3 of the way. Then put the cupcakes in the preheated oven to bake for 20 minutes. During this time, they should increase in size and brown on top. The tops of the cupcakes may crack a little.
Ready-made rice flour cupcakes with candied fruits are ready! Before use, they need to cool down a little. Serve with hot aromatic tea, coffee or milk.
