Cooking method
To start, let's prepare a sourdough:
1. Preheat the serum (or water) to 38 degrees.
2. Pour yeast into the warm whey, stir.
3. Add the sifted flour and sugar to the yeast and whey mixture, mix well.
4. Cover the dough with a towel or a lid, put it in a warm place for 1 hour.
During this time, the dough will increase in volume and it will be possible to proceed to the preparation of the dough:
1. Beat the egg, add to the approaching dough.
2. Pour in the serum.
3. Add sugar, salt and vanilla, then mix.
4. Melt the butter, pour in the rest of the mass.
5. In small portions, add the sifted flour to the dough, knead the dough.
6. Cover the finished dough with a towel and put it back in a warm place, now for an hour and a half.
7. At this time, rinse the raisins, dry with a towel.
8. Mix the raisins with the dough.
Now you can proceed directly to the preparation of crackers:
1. Grease the baking sheet with vegetable oil. You can also use baking pans.
2. Divide the dough into several parts, form the bars and put them on a baking sheet. Or put it in the molds.
3. Leave the bars in a warm place to approach. It will take an hour and a half.
4. Beat the egg and grease the surface of the bars.
5. Preheat the oven to 200 degrees and bake the bars for 20-25 minutes until browned.
6. Leave the finished bars to lie down for 12 hours, as fresh blanks can crumble a lot when sliced.
7. Cut the bars into slices 1-1.5 cm thick. Put them on a baking sheet in one layer.
8. Place the baking sheet in a preheated 180 degree oven. Be careful not to over-dry the crackers, as the drying process is quite fast.
9. The crackers are browned - turn them over to the other side and continue to dry.
Homemade crackers with raisins are ready and can be served with tea. It is especially delicious with various additives, for example, jam.
