Step 1:
Prepare the ingredients. To prepare such a roll, a minimum of ingredients is required, especially if you use ready-made store-bought puff pastry. You can prepare puff pastry at home and freeze it for the future in the freezer, and then defrost it on occasion and use it for baking.
Step 2:
Dissolve sugar and salt in a glass of warm water. Remove the butter from the refrigerator and let it soften while we prepare the dough base.
Step 3:
Pour the mixture into a bowl, drive an egg into it. Shake it up. Add a tablespoon of vinegar (9%). Stir the mixture.
Step 4:
Pour the sifted flour into this mixture in parts. And knead the dough. We look at the consistency of the dough. The dough should be elastic and soft, not stick to your hands.
Step 5:
Add a little flour if necessary. Roll the dough into a ball.
Step 6:
Softened butter is divided into four equal pieces. The dough is also divided into 4 equal pieces.
Step 7:
Roll out each piece of dough on a battered board into a thin rectangular layer about 3 mm thick.
Step 8:
Spread it with butter, evenly distributing it over the dough with a spatula. For each piece of dough, a piece of butter.
Step 9:
Fold the dough several times with an envelope and roll it out each time with a rolling pin. We put it in the freezer for storage or proceed to the preparation of products from it.
Step 10:
One layer of puff pastry is enough to make one roll. Defrost the dough and roll it out into a thin rectangular layer.
Step 11:
Hard cheese can be taken of any variety according to taste and availability. But it is better to use a saltier kind of cheese, then the filling will not need to be salted. Grate the hard cheese on a medium grater.

Fresh herbs can also be taken according to taste and availability. However, it is better to use a set of greens: parsley, dill, cilantro, basil and so on. Then the taste of the filling will be very unusual, fragrant and rich, and everyone who tries such pastries will find some particularly pleasant aromatic note in it. Fresh greens are well washed under running water, let the water drain, and cut finely with a knife.
Step 13:
Spread the grated cheese on the dough in an even layer around the perimeter.
Step 14:
Spread the washed and dried greens on a layer of cheese.
Step 15:
Roll up the roll carefully, twisting the ends so that the filling does not fall out of the dough.
Step 16:
We make longitudinal incisions diagonally on the roll so that the layers and the filling become visible. In a bowl, beat a chicken egg with a pinch of salt. With a beaten egg, grease the roll on top. To lubricate such a roll, half a raw chicken egg will be enough. The oven is heated to 180 degrees. Bake the roll for about 20 minutes, until golden brown. We serve the roll to the table when it cools down a little so that the guests are not burned by the melted cheese. Have a nice tea party!
