1. To defrost the puff pastry without yeast in advance, taking it out of the freezer. Puff pastry can be bought at any supermarket in the frozen food department.

2. Turn on the oven at 180 degrees Celsius and set the mode that most favors baking - convection mode or heating from above and below.

3. Suluguni cheese and cheese (you can take any other cheese at will and taste preferences) grate on a coarse grater. Mix the cheese together.

4. Put the soft puff pastry on the work surface, previously sprinkled with flour, so that the dough does not stick to the surface. Roll out the dough with a rolling pin into a thin layer and cut with a sharp knife into 8 equal parts of a square shape.

5. Break the egg, separating the yolk from the protein. Crack the protein with a fork or whisk in a small container.

6. Using a special brush, lubricate each square of the dough with a protein mass.

7. Put grated cheese in the middle of each piece of dough. Grease the edges of the dough with the remaining egg white and pinch together so that the cheese does not leak out.

8. After the edges of the dough are tightly fastened, it is necessary to roll out the khachapuri carefully with a rolling pin. Thanks to this process, the cheese is imprinted into the dough, forming a single creamy taste.

9. Next, grease the tops of the dough with egg yolk so that the finished khachapuri has a beautiful glossy crust.

10. Cover the baking sheet with baking paper and put the molded khachapuri on it. Put it in a preheated oven. Khachapuri should be baked for about 25 minutes, until they are covered with an appetizing golden crust.
