1. In a dough bowl, sift two-thirds of the total volume of flour. Add yeast, salt and sugar. Gradually adding warm water, knead the dough. Add the next portion of oil only when the previous one is completely absorbed. After that, mix the remaining flour in the same portions. The dough should be dense, but not dry. If you have a lot of flour, do not add all of it. If it's not enough, add more. Cover the dough with a wet towel and leave for 30 minutes.
2. Fry the sesame seeds until golden brown. You can not fry, but the taste is brighter this way. Before baking, simites are dipped in syrup or water. For a sweet crust, syrup is made from molasses and water (sometimes a lot of water is added, sometimes just a little bit, you need to try it as you like). You can mix honey with water, or you can just take water, not sweet.
3. Divide the dough into as many parts as you want simits (remember the cartoon how a man ordered a hat to be sewn from sheepskin). For this volume of the test, 3-6 simits are optimal. Roll the pieces into small sausages and leave for 10-15 minutes.
4. Brush each sausage with olive oil and leave it under a damp towel for another 10-15 minutes.
5. Roll out each sausage with your hands into a rope (as Irina Khlebnikova says) 80-100 cm long. Start rolling from the center, slightly stretching to the sides. If the dough does not stretch, leave it to rest for 5 minutes, and at this time roll the next piece. Then fold the ropes in half and twist them into bundles, fasten the ends so that they form a ring.
6. Dip each simite first in water (in syrup), and then roll in sesame seeds. Place the simits on a baking sheet and put them in the oven preheated to 35 degrees for 15 minutes. Then take it out and let it stand for another 15 minutes. Simits will do well. At this time, preheat the oven to 250 degrees (or how much it is capable of).
