Step-by-step cooking
Step 1:
Prepare the necessary ingredients for making crackers at home. Take the usual water at room temperature. Vegetable oil is better suited without smell. For crackers, the gluten content in flour should be in the range of 28-30%, which is typical for flour of the highest and first grades. To make the crackers successful, a lower grade of flour should not be used.
Step 2:
Combine flour with salt, sugar, baking powder, mix. Sift the dry ingredients into a convenient container. It should be of a suitable size and height so that the flour does not spill out on the table when sifting. Sifting will enrich the flour with oxygen, thereby improving the structure of the finished crackers.
Step 3:
Add flax seed to the sifted dry ingredients, mix. Flax can be replaced with sesame or sunflower seed.
Step 4:
Make a recess in the flour, pour in vegetable oil.
Step 5:
Add water. Mix the dough first with a spoon, then knead with your hands. This should be done quickly, no more than 3-4 minutes, so that the cookies do not turn out to be dense and harsh.
Step 6:
The dough turns out cool, but soft. Wrap the dough in cling film or cover it so that it does not wind up. Leave the dough to "rest" for 30 minutes. During this time, the gluten will swell, and the dough will become more pliable. It will be more convenient and easier to roll out.
Step 7:
Sprinkle the table with flour, roll out the dough into a layer about 2 mm thick.
Step 8:
Cut the dough into cookies of the desired shape and size.
Step 9:
Carefully transfer the blanks to a sheet covered with oiled parchment. Prick each cookie with a fork so that it does not swell when baking.
Step 10:
Bake the crackers in a preheated 190 degree oven for 10-15 minutes. Cookies are thin, so they bake very quickly. As soon as the edges begin to blush, immediately take out the crackers so that they do not dry out and become stiff. The baking time will depend on the specifics of the oven.
Step 11:
Properly cooked crackers are crispy and have a layered structure. Serve crackers with tea, coffee, milk. Bon appetit!
Homemade crackers, of course, are somewhat different from the store version. But they turn out to be no less delicious.
Such cookies can be stored in a closed jar for up to two weeks. It will retain its taste qualities and remain crisp if there is no high humidity in the room.
