Fast, simple, appetizing, and quick! This salad with fried mushrooms, cucumbers, and eggs is made from simple ingredients, yet comes out hearty and very tasty. It takes hardly any time to make. You can also serve it for a holiday, layering it inside a ring mold.

    Wash the mushrooms, gently wiping them with a sponge. Don't get them too wet under water - mushrooms soak up moisture readily and then turn watery and bland. Dry them and cut them into quarters.

    Heat a skillet and add vegetable oil. Fry the mushrooms, stirring, over low heat until all the liquid has evaporated and they're golden.

    Hard-boil the eggs, cool them, and peel them. Chop them with a knife.

    Wash the cucumber and trim off the ends. If the cucumbers have very thick skin, peel it off. Cut them into medium pieces.

    Combine the mushrooms, eggs, and cucumber in a salad bowl.

  • The salad looks neat and pretty if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
  • How do you hard-boil eggs? To keep the eggs from cracking while they cook, put them in cold water and set them over low heat. Boil the eggs for 9 minutes after the water comes to a boil, then cover with cold water and cool. The sharp temperature change makes the shells easier to peel.
